Cranberry bars are the perfect post-holiday dessert and if your family is like mine, chances are you have a few cranberries roaming around in the back of the fridge. For this recipe, you’ll only need a cup and a half.
To start, preheat the oven to 350 degrees and line a 9×9 pan with aluminum foil with overhanging edges.
Then, cream the butter and sugar together using a mixer. Once combined, beat in the salt and vanilla. Next, gradually add the flour until the batter just comes together.
Can we just talk about how pretty they look once they’re cut? But, moving on.
Divide the batter into three (3) equal parts. Gently press 2/3 of the batter into the bottom of the lined baking dish, and then scatter the fresh cranberries over the top. Crumble the remaining batter into chunks over the top of the cranberries (it’s okay if some show through).
Bake for 45-50 minutes until lightly golden and allow to cool completely on a baking rack. Then simply slice it up and enjoy!
*Note: The cranberries are naturally very tart, so if you like your desserts to be sweeter, you may want to additional sugar.

- 1 cup (2 sticks) unsalted butter, at room temperature
