Banana Streusel Muffins

Blueberry or pumpkin streusel-topped muffins might be the most common flavors, but let’s be honest with each other – streusel on top of anything is delicious. Muffins are fun to make and even more enjoyable to eat because it’s like your own personal cake! Plus, they’re BANANA flavored, and who doesn’t like that? I promise you’ll go ‘bananas’ for this recipe. So, make it…like, right now. Here’s how you do it:

The Batter:

Get the usual stuff out of the way – grab two bowls (one large, one medium) and get your oven preheating to 350 degrees. In the medium bowl, combine 2 cups of flour, 1 teaspoon of baking soda, 1/4 teaspoon of salt and 1/4 teaspoon of cinnamon, and then set aside. In the larger bowl, whisk together one egg and 1/2 cup of packed brown sugar until smooth and lump-free. Next, add in 1 teaspoon of vanilla extract, 5 tablespoons of unsalted, melted butter that has been cooled, and 3 mashed bananas. Mix these ingredients until combined.

Gradually add the dry ingredients into the wet ingredients, mixing until incorporated. Once combined, stir in 2/3 cup of milk. The batter will look very runny but will get thicker as the milk is stirred.  Line a muffin pan with liners and fill each liner 2/3rd of the way with batter, and then top with the streusel crumb topping.

The Crumb Topping:

To make the best part of the muffin, in my humble opinion, simple whisk 1/3 cup of brown sugar with 1/3 cup of granulated sugar, 1/4 teaspoon of cinnamon, 1/4 teaspoon of salt and 1/2 cup of melted butter. After the sugar has been somewhat dissolved into the hot butter, add 1 1/2 cups of flour to the mixture using a fork. As the name implies, the mixture will be crumb-like and dry – this is what you want!

*Note: The crumb topping recipe makes a lot of streusel, so be sure to apply it liberally to the cupcake batter.

Bake for 15-17 minutes until a toothpick inserted into the center of the cake comes out clean. Allow to cool and then eat, eat, eat!

  • 1/2 cup unsalted butter, melted
  • 1 1/2 cup all-purpose flour
